Casserole of smoked trout

1 pound hot smoked trout
1 1/2 cups spinach (cooked & drained)
1 tablespoon melted butter
1/4 teaspoon pepper
1/8 teaspoon nutmeg
2 tablespoons onion (chopped)
1 clove garlic (finely chopped)
1 tablespoons cooking oil
3 tablespoons flour
1 1/2 cups milk
2 tablespoons Sherry
1/4 cup Parmesan cheese (grated)

Chop spinach. Put in greased baking dish. Season with melted butter, pepper and nutmeg.
Cook onion and garlic in oil until tender. Blend in flour then add milk. Cook until thick stirring constantly.
Break up and lightly mash trout. Add it and Sherry to sauce. Pour sauce over spinach.
Sprinkle with grated cheese.

Bake at 350 degrees for 20 – 25 minutes.
Garnish with hard boiled egg slices, water cress or parsley.
Serves 6.
